Seaweed production cuts cause prices to soar; major Japanese manufacturers develop imitations using this raw material.

Due to climate change and global warming, seaweed production has declined sharply in recent years, leading to a continuous surge in prices. Japanese snack giant Calbee has therefore developed a seaweed-like product, using potato starch as its raw material.

Calbee recently developed a new product that uses potato starch, a byproduct of potato chip production, to create a "seaweed-like" product. This "seaweed substitute" involves coloring potato starch with plant-based ingredients and baking it into black, square sheets.

The global seaweed production has decreased significantly in recent years due to climate anomalies such as global warming, leading to a continuous rise in prices. The average price per sheet of seaweed is projected to increase from 10.48 yen in fiscal year 2020 to 24.13 yen in fiscal year 2024, representing an overall increase of more than 200%.

In the pursuit of effective utilization of food resources, more and more food companies are investing in the development of "plant-based" alternative foods, and the number of related products is increasing year by year. Nissin Foods has launched plant-based "eel"; Kagome has also collaborated with plant-based companies to develop "alternative eggs".
